What a difference 24 hours can make. 

All the revelry during Carnival culminates on Mardi Gras. The feasting, drinking, dancing and celebrating peaks on Tuesday followed by a solemn Ash Wednesday with the start of the Lenten season. 

Observation of Lent lasts for about six weeks until Easter Sunday. During that time believers give up a luxury as a form of penance or fast from meat. Seafood becomes a much sought after food with many churches around the metro area holding fish-fry Fridays.
